- 1 punnet cherry tomatoes on the vine
- 1 shallot thinly sliced
- 2 Tbsp olive oil
- 1 tsp paprika
- salt
- ground black pepper

Instructions
- Heat the oven to 220C (200C fan).
- Tip the tomatoes into a baking tray.
- Scatter the shallot slices
- Drizzle with the olive oil
- Season with paprika and some salt and pepper
- Roast for 20 min and serve
