Instructions
- Preheat the oven to 200C fan
- 1. Half the longer courgettes then slice lengthwise.
- 2. Toss the courgette slices in flour to coat.
- 3. Oil the bottom and the sides of a metal roasting tin.
- 4. Arrange the courgettes in a single layer.
- 5. Drizzle the rest of the oil over the courgette slices.
- 6. Bake for 15 minutes then turn over and continue for 5 more minutes
- 7. Sprinkle with the parsley and drizzle a few drops of balsamic vinegar.
