Ingredients
- 1 salmon fillet poached for 7 minutes, cool and store in the fridge
- 1 packet Chinees stir-fry mix (320g)
- 4 Tbsp cooked rice cooked in advance and keep store for 1 day in the fridge
- 1 Tbsp coconut oil
- 1 tsp cornflour disolved in 1/2 cup of cold water
- soy sauce to taste

Instructions
- Heat the oil in a large frying pan or wok
- Stir-in the vegetables for 4-6 minutes
- Add the rice and fish and stir to heat through
- Add the cornflour and season with soy sauce and heat to thicken,
- Can dilute with a little water or stock.
