Vegetable Bhaji

Ingredients

Serves 2

1 small courgette sliced

1 red pepper cut into chunks roughly the same size as the courgette pices

5 Tbsp chickpea flour

Water

1/2 tsp each of  salt, turmeric, ground black pepper, ground cumin, ground coriander

3 Tbsp coconut oil or other high-smoke-point oil

1 Tbsp mayonnaise

1 Tbsp plain yoghurt

Method

Mix the flour, spices and enough water to make a thick paste.

Add the chopped vegetables and stir to coat.

Heat the oil and then cook the vegetables in single layer batches,  until the batter is set and golden brown on both sides.

Make a dressing by mixing the mayonnaise and yoghurt.

Drizzle the dressing over the bhaji.

Suggestions : use a choice of vegetables instead of or as well as courgettes and pepper : e.g. cauliflower, aubergine or sliced onions.

Traditionally  this is a snack dish. Add some cooked rice and a mixed salad to make a meal.
