Red cabbage salad

Ingredients

1/4 red cabbage – shredded

1 small red onion – diced

1 red apple – peeled, cored and cubed

2 cooked beetroot – cubed

2 Tbsp walnut pieces

1 orange – segmented

2 Tbsp oil

1 Tbsp vinegar

1 tsp honey

Method

Make a dressing by mixing the oil, vinegar and honey, aiming to be more a ‘salt and vinegar’ taste than a ‘sweet and sour’ taste. Season.

Halve the orange segments.

Add the cabbage, onion, apple, beetroot, walnuts and orange to the dressing and mix.
