Mince Stir Fry with Cabbage and Mushrooms

Ingredients

Serves 2

200 g minced meat

50 g shredded cabbage or to taste

2 small potatoes roughly chopped

2 large mushrooms sliced

1 Tbsp oil – e.g. coconut oil

1 Tbsp flour – e.g. spelt flour

1 tsp salt

1 tsp paprika

water

6 gherkins, sliced

Method

Heat the oil and add the cabbage and potatoes,

Cook at high heat covered, stirring from time to time  until the vegetables  catch colour.

Add the mushrooms, cover and continue on high heat for a few minutes.

Stir in the meat to heat and break up.

Stir in the salt, paprika and flour .

Add water to make a thin sauce and then a little more water. Stir.

Reduce the heat and cover. Simmer for  10 minutes.

Serve with the gherkins.
