Using poached salmon fillets, cooked rice and a packet of bought stir-fry vegetables this takes10 minutes to cook.

Ingredients

salmon fillet
poached for 7 minutes, cool and store in the fridge
1
packet
Chinees stir-fry mix (320g)

Tbsp
cooked rice
cooked in advance and keep store for 1 day in the fridge

Tbsp
coconut oil
1
tsp
cornflour
disolved in 1/2 cup of cold water
soy sauce to taste
Instructions
Heat the oil in a large frying pan or wok
Stir-in the vegetables for 4-6 minutes
Add the rice and fish and stir to heat through
Add the cornflour and season with soy sauce and heat to thicken,
Can dilute with a little water or stock.
