Pickled red onions

Ingredients
- 1/2 cup white vinegar
- 2 tablespoons sugar
- Salt
- 1 medium red onion, sliced
Method
Combine the white vinegar, sugar, and 1 teaspoon salt in a small saucepan with ½ cup water. Bring to a simmer over medium-high heat and then add the onions. Return the liquid to a simmer, then take off the heat and let stand 15 minutes; drain.
PS
I added a few black peppercorns and a bay leaf
I used 1 cup of water instead of ½ cup
Once I put the onion in the liquid I took it off the heat without any further cooking. Ready to eat after 10 minutes.
Most on-line recipes do not use water at all, just vinegar as a solution. Too strong for me.
